Posted in Cooking & Recipes on 27.09.09 by Merlyn

Nicole asked:

Mac and Cheese is one of my favorite foods. Unfortuantely, I only know how to make the stuff out of the box. I only eat the good kind at restaurants. Can someone give me a good recipe for Mac and Cheese that I can make at home?

I usually make mac and cheese when I have lots of different types of cheese left over- a variety is great and makes for a tasty dish. Or add chopped ham and or green pepper… yum.

        Baked mac and Cheese

        Ingredients:
        6 tablespoons butter, divided
        1/4 cup flour
        1 teaspoon salt
        1/2 teaspoon dry mustard
        1/4 teaspoon pepper
        3/4 teaspoon Worcestershire
        3 cups milk
        1 small onion, grated
4 cups shredded sharp Cheddar cheese- or a mixture of cheeses
        dash of tabasco sauce
8 ounces elbow macaroni, cooked and drained
3/4 cup bread crumbs (seasoned or not- I like the progresso italian)

        Directions:

In saucepan over medium low heat melt 4 tablespoons butter; blend in flour and seasonings, stirring until smooth and bubbly. Gradually stir in milk; cook and stir until thick and smooth. Stir in grated onion and 3 cups of cheese.

Place cooked drained macaroni in a buttered 3-quart casserole. Pour sauce over macaroni and gently mix to blend. Melt remaining 2 tablespoons of butter and toss with the bread crumbs. Sprinkle bread crumbs over the macaroni and top with the rest of the cheese. Bake at 375F for 30 minutes, or until golden brown

            Baked Macaroni and Cheese

            1/2 pound elbow macaroni
            3 tablespoons butter
            3 tablespoons flour
            1 tablespoon powdered mustard
            3 cups milk
1/2 cup yellow onion, finely diced
            1 bay leaf
            1/2 teaspoon paprika
            1 large egg
            12 ounces sharp cheddar, shredded
            1 teaspoon kosher salt
            Fresh black pepper
            Topping:
            3 tablespoons butter
            1 cup panko bread crumbs

Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it’s free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.

            1. you asked says:

take 4 cups of cooked macaroni plain(the fatter the better)after draining add back to the hot pot and add 2 cups of velveeta cheese shredded or small pieces , 2 tablespoons of parmesan cheese 1/4 cup milk and 1/2 teaspoon salt and 1 tablespoon of butter.put the stove on a medium heat and stir the noodles and ingredients until well mixed and melted.

              1. free starr says:

After your macaroni noodles are done drain the water and mix in heavy cream and a cup of whole milk and one stick of butter and mix in a least 3 of your favorite cheeses and mix it all together in a bowl. Get your baking dish and add cheese in the bottom of the dish so that every spoonful there will be cheese on the top and the bottom then go ahead and pour your macaroni in the baking dish and let it cook to your desire.

The recipe Skater Girl gave you is Alton Brown’s recipe. I make it at least once a month, and it is the best mac and cheese I’ve ever had. I’ve not been able to eat the boxed stuff since. It’s a lot easier than it looks, too.

Just remember to use a good, flavorful cheddar. Using one that is too mild is the only way to screw that recipe up.
