I need a good recipe for mac and cheese, please?

I’m just sick of the boxed kind. And I want to be able to make it myself. What would I need to make it, type of cheeses, and such??? The bad thing is that I can’t possibly bake it in the oven since it is broken. I guess I’d have to use the burners only. This recipe is still more homey than upscale, but it’s too delicious not to share. It’s meant to be low-fat, so you just have to add way more Gouda than called for.
Smoky Macaroni and Cheese
8 ounces dried large elbow macaroni
3 ounces smoked cheddar cheese or smoked Gouda cheese
1 cup reduced-sodium chicken broth
1/2 cup chopped onion
3/4 cup fat-free half-and-half
1 tablespoon all-purpose flour
1/2 teaspoon dry mustard
1/4 teaspoon black pepper
1 medium tart apple, cored and coarsely chopped (2/3 cup)
1 tablespoon finely shredded Parmesan cheese
Directions
1. Cook macaroni according to package directions; drain. Return macaroni to saucepan. If desired, remove any darker outer layer from smoked cheese with a vegetable peeler. Shred cheese (you should have about 3/4 cup); set aside.
2. For sauce, in a medium saucepan combine broth and onion. Bring to boiling; reduce heat to medium. Cook, covered, about 5 minutes or until onion is tender. In a screw-top jar combine half-and-half, flour, mustard, and black pepper; cover and shake well. Add to onion mixture. Cook and stir just until bubbly. Remove from heat. Add smoked cheese, stirring until most of the cheese is melted. Pour the sauce over cooked macaroni; toss to combine. Pour into a 1 1/2-quart casserole.
3. Bake, covered, in a 350 degree F oven for 10 minutes. Uncover and bake about 10 minutes more or until bubbly. Let stand for 5 minutes. Top with chopped apple and Parmesan cheese. Makes 4 servings.

My favorite is crockpot macaroni & cheese with macaroni, cheddar cheese, canned milk and onions, topped with paprika. Place 3 cups cooked elbow macaroni, cubed cheddar cheese and one diced onion into the crock pot (or leave onion out, if you don’t like onion), and 1 2/2 can of milk. Let cook slowly for about 2 1/2 hours. Yum!

Honestly, I simply cube Velveeta and melt it in the pasta, it’s great!

Macaroni and Cheese
6 servings 40 min 10 min prep
1 lb elbow macaroni (cooked)
1/2 cup butter
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup flour
3 1/2 cups milk
1 lb cheese, cut into cubes (I use Velveeta for creamier mac and cheese)
breadcrumbs
Preheat oven to 350 degrees.
In a pan cook butter, salt, pepper and flour and stir until smooth.
Remove from heat add milk, return to heat and bring to a boil.
Boil 1 minute.
Remove from heat and add cheese, stir until melted.
Pour over elbows, sprinkle with breadcrumbs and bake at 350 degrees for 30 minutes.

thats easy for me this is how i make my cheesy liscous stove top mac and cheese:
first bowl your favorite noodles til done.. it can be elbow, bow tie, sprials, what ever about one pound, when done drain salt , pepper and add 2 Tablespoons of margarine… stir in about 4 oz of cubed velveta..place top on boiler do not put on stove top to heat let the heat of the noodles melt cheese.. mean while
in a small sauce pan cube up 8 0z of sharp chedder cheese, 1c milk or half and half, 4oz cubed mozzerella and heat over very low heat stiring constantly…until you have a creamy sauce at this point i add a teaspoon of garlic powder to sauce and stir remove from heat… add this sauce to the noodle mixure stir till well mixed and there you have a creamy simple homemade mac and cheese

STOVE TOP MACARONI AND CHEESE
1 box macaroni elbows
1 stick butter
1 can of evaporated milk or cream
1 lb. Velveeta cheese
boil macaroni in salt water for approximately 7-8 minutes. You do not want it completely done because the process finishes cooking it. Drain the water off leaving about 1 cup of water in it. Mix in 1 stick of butter, 1 can of evaporated milk, 1 lb. Velveeta cheese. Heat on medium on stove until all is blended.
Put in glass dish and lay slices of cheese on top. Place in oven on broil until top is melted. Place it aside until it cools.
As it cools it will thicken up. It will be soupy when you first make it. Enjoy!

I actually just made mac and cheese with no box! I boil the pasta…I used egg noodles today. drain but don’t rinse, put back in the pot before it cools off put one or two handfuls of grated cheese (I use a blend of 4 that you buy already shredded and mixed “Mexican”) a splash of milk and stir, crack some pepper over it and stir again. serve!
Wonderful and super simple. You could even do it in the microwave if you had to.

Stove Top Mac and Cheese
Alton Brown
1/2 pound elbow macaroni
4 tablespoons butter
2 eggs
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded
In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

Easy Mac-N-Cheese
Whte Sauce:
4 tablespoons butter
4 tablespoons flour
2 cups milk
Melt butter over low heat. Add flour, mix well, add milk- cook until thickened. Add Chopped Velveeta cheese.
Cook macaroni (1 1/2 cups), drain- add cheese sauce. Mix well. Put in buttered crockpot- top with buttered bread crumbs. Simmer on low until brown- about 1 1/2 hours. Enjoy!

BAKED HOMEMADE MACARONI AND CHEESE
Elbow macaroni
2 lbs. Cheddar cheese
1 sm. pkg. Mozzarella cheese
Milk
3 eggs
Med. bowl of bread crumbs
2 green peppers
Salt and pepper
Cook macaroni until done. Add your cheeses, then add eggs, milk, green peppers, salt and pepper. Mix and then put into baking pan, then put bread crumbs on top. Heat oven to 275 degrees.
