♥The Mrs.♥ asked:

I would like to make something other than regular Macaroni and Cheese. How can I use the boxed mac and cheese to make something new….preferably something somewhat light.

  1. If you use the cheese, it won’t be light. But, how about adding cubes of ham and diced tomatoes? Or add a pound of ground beef, browned, and a can of stewed tomatoes. Sort of a one-dish meal if you’re in a hurry.

  2. You can add a large can of drained Tuna or Chicken to it. Or a pound of browned and drained ground beef.

  3. Add lean ground beef or ground turkey that’s if your a meat eater, or you can also add green and red peppers.

I usually make boneless skinless chicken breasts marinaded in lawry’s baja chipotle marinade, then I either bake or grill the chicken. That way, it’s light enough for the warmer weather, but it’s packed with flavor.

I made this up, and it’s pretty darned good. Fry up about 8 oz. lean burger, taco seasoning, and a little can of Ortega fire roasted green chiles. Drain that, and add to the mac and cheese. It’s like homemade hamburger helper, only better!

  15. Add some sliced all beef hotdog pieces to the finished Mac and Cheese from a box. Or add whatever you think will make for a zesty treat.
