What kind of Vegetables to serve with Macaroni and Cheese?

Ive found the BEST Macaroni and Cheese Recipe, I didn’t even like mac&cheese until I found this one.
It has protein, fat and carbohydrates in there, but…no Vegetables except onions. What’s a good way to serve some vegetables with it? That will go nicely?

          I’m partial to broccoli myself. Seems to compliment the cheese (like broccoli and cheese soup).

            Peas. Fresh or frozen, just boil ‘em up and mix ‘em in with the mac and cheese. I know it sounds kind of odd, but it really works, especially if you don’t overcook the peas.

              Carrotts or Broccoli.They make it prettier and they are a firmer texture than the macaroni. Somethig real soft like spinich would not be good. Tomato slices would.

                I am a long time M & C fan. My first choice: stewed tomatoes. Sometimes, if the tomatoes are not too wet, I dump them into a bowl on top of the M &C.
                My second choice: steamed broccoli florets.

The florets can be steamed or boiled and served as a side dish, or served raw on a crudité platter, or stir-fried. The stems are good, too, but you should peel them first and cook them a little longer. Select broccoli that’s dark green and fresh smelling. Substitutes: broccoflower OR cauliflower OR broccoli raab (stronger, more bitter flavor; takes less time to cook)

                      Leeks go quite nicely. Or you could try cauliflower for a pasta take on the Cauliflower and Cheese. If you want to just add some bulk try Parsnips.
